Carmel Corn w/ Dark Chocolate & Sea Salt

Popcorn is one of my favorites on its own or with butter and salt but this stuff… this stuff is amazing… so good. It’s a stove top version of the carmel so you don’t have to wait an hour for it to bake in the oven. This is great for having friends over and can be a great gift too all wrapped up in some cute way. But watch out… it’s addictive!!!

Air pop or pop your popcorn on the stove top or you can even use microwave popcorn. You will need about 12 cups of popped popcorn, which is about 1/2 cup unpopped kernels. Now grab a medium sized saucepan and add in 1 stick butter, 1 cup brown sugar, 1 Tbs water, and a pinch of salt. You are going to cook this until it is 305 degrees or the hard crack stage… more on this later.

While that is heating up get out 1 tsp vanilla and 1 tsp baking soda.
Your mixture on the stove will boil and start to caramelize. You can measure the temp using a candy thermometer or by keeping a glass of ice water near your pan. When you think the mixture is ready drizzle a little into the ice water. Pick up the candy in the water. If it is soft and squishy it’s not ready. If you can pick it up and snap it like glass its ready.

Remove mixture from heat and add in vanilla and baking soda.

Your popcorn should be patiently waiting in a couple of large bowls.

Divide out the carmel sauce between the bowls. Have someone help you mix or go back and forth mixing the carmel and popcorn to coat.

Dump the contents of each bowl onto a baking sheet lined with parchment to cool.

While the popcorn is cooling set up your fancy double boiler or in my case a baking dish from Ikea on top of my saucepan πŸ™‚ Whatever works!! You are going to melt down some chocolate!! I chose dark chocolate but if you prefer milk chocolate you go ahead and use that. You’ll want around 4 oz.

Once the chocolate is melted you will start drizzling it over the popcorn. I put my melted chocolate in this handy dandy hair coloring bottle from Sally’s. It was super easy to drizzle the chocolate just how I wanted it. These bottles are also great for royal icing… anyway…

Next up… salt. Sure you can use any old salt you have around but I had some of this delicious celtic sea salt… sooo good.

Sprinkle a little bit of salt over your popcorn and let it harden/cool… if you can stand it!!! Don’t over salt! Enjoy!

Carmel Corn w/ Dark Chocolate and Sea Salt
12 cups popped popcorn (1/2 cup unpopped kernels)
1 stick butter
1 Tbs water
1 cup brown sugar
1 pinch salt
1 tsp vanilla
1 tsp baking soda
4 oz dark chocolate
Sea Salt to taste

Pop popcorn. In medium sauce pan combine butter, water, sugar, and salt. Bring to 305 degrees or hard crack stage. Remove from heat and add in baking soda and vanilla. Pour over popcorn and toss to coat. Dump onto parchment lined baking sheets to cool. Melt chocolate over double burner and drizzle over popcorn. Sprinkle lightly with sea salt. Let cool and harden, enjoy!
