Maple-Mustard Glazed Chicken

This chicken is a combo of sweet and tangy and super simple to make. It also has a great presentation with the glaze and would be a perfect dish for serving friends. It’s a hit at our  house for a change of pace with chicken dishes now and then.

Start a pan with olive oil on the stove at medium-high heat and drop in your salt & peppered chicken when the oil is hot.

While that is searing on the first side measure out 1/4 cup each of pure maple syrup and chicken stock. Please use real maple syrup… always… thank you.

Also chop up a couple cloves of garlic quick.

Once the chicken has seared on one side, flip it. You’re not trying to cook it through… just searing it. Once it is seared on both sides transfer it to a clean plate.

Pour your syrup/stock into the pan…

along with your chopped garlic. Use a wooden spoon to work up all the browned chicken bits and utilize all that good flavor. Let this cook for a couple of minutes.

Add in a Tablespoon of fresh thyme or some dried if that’s all you have. No biggie 🙂

Also a Tablespoon of apple cider vinegar…

and a Tablespoon of mustard. I prefer the really grainy mustard but you can sure use your Grey Poupon if you wish! Stir that all around and let it cook for just a minute.

Return your chicken to the pan and spoon the glaze over the chicken. Now… if you’re using an oven safe skillet you can pop this right into the oven. If not, you can transfer all of this to a baking dish. Pop into the oven for about 10-12 minutes or until chicken is done.

Remove from oven, transfer chicken to clean plate to rest and let sauce reduce over medium-high heat just a bit.

Plate up chicken and spoon glaze over top… so good… everything should really be glazed I think 🙂 Try this simple dish to add some variety to your easy chicken dinners! I would say this recipe would be perfect for 2-3 chicken breasts. You can easily double it for more glaze or more chicken.

Maple Mustard Glazed Chicken
2-3 chicken breasts
1/4 cup pure maple syrup
1/4 cup chicken stock
2-3 cloves chopped garlic
2 tsps fresh thyme
1 Tbs apple cider vinegar
1 Tbs stone ground mustard

Preheat oven to 400 degrees. Heat oil over medium high heat. Add in chicken and sear on both sides (2-3 minutes each side). Remove chicken from pan and add in syrup, chicken stock, and garlic. Deglaze browned bits on bottom of pan with wooden spoon and cook for a couple minutes. Add in thyme, cider vinegar, and mustard. Stir and cook for another minute. Add chicken back into pan and spoon glaze over. Bake for 10-12 minutes until chicken is cooked. Remove from oven and transfer chicken to clean plate to rest. Reduce sauce over medium heat for 2 minutes. Plate chicken and spoon glaze over top.
