Blue Cheese Stuffed Bacon Wrapped Dates

These are good! Most things stuffed with cheese and wrapped with bacon are… that’s just a given ๐Ÿ™‚ The combination of the salty crunchy bacon, the sweet chewy date, and the savory tang of the blue cheese come together to create a great little appetizer. You can also make these with figs, the ones I’ve done here are actually figs but dates have a sweeter taste and would be my preference.

Start out by cutting the dates/figs in half but leaving the thick bottom end attached. Kinda like when you split open a hot dot bun… You want it open but still a bit attached. Get it?

So basically where my thumb is covering up it’s still attached…

OK, so now take a hunk of blue cheese and give it a rough chop. You can’t really neatly cube blue cheese plus the dates will vary in size so you can pick up and pinch together as much or as little of it as you need for each one.

Jam the blue cheese into the date like so…

You will end up with a plate full of these guys.

Now grab a pound of bacon and cut it into thirds or fourths, depending on the size of the dates/figs.

Wrap the date completely and try to overlap the bacon a bit if you can. You can make these ahead up to this point a day in advance. If you do that, don’t put a toothpick in them cause they will take up more space. Do put a toothpick in them before baking to secure bacon in place.

Line a baking sheet with foil and place a heatproof baking rack on the baking sheet so the grease from the oil will drain. Put them in an oven at 375. Bake until bacon is crispy. Remove from oven and turn over dates to get bottom side of bacon crispy. Return to oven and turn to broil to finish off bacon.

Transfer from baking rack to paper towel lined plate to drain off some grease. Serve warm or room temp.

Move to serving plate and watch as they disappear before your eyes! Bacon and blue cheese… how could that go wrong?? And the dates… well they will make you feel like your making a healthy decision ๐Ÿ˜‰

Bacon Wrapped Dates Stuffed with Blue Cheese
1 lb pitted dates
1 lb bacon
4-5 oz blue cheese

Slice into dates leaving them partially attached. Roughly chop blue cheese. Stuff dates with blue cheese. Cut bacon into 1/2s to 1/4s depending on size of dates. Wrap dates in bacon and secure with toothpick. Bake at 375 until bacon is crispy. Turn dates and return to oven and broil until all bacon is crispy. Transfer to paper towel lined plate to drain off excess grease. Transfer to serving plate. Serve warm or room temp.
