Watermelon Margaritas

If you’re of drinking age… and you love watermelon and you love margaritas… make these!! They are easy and smooth and quite possibly my new favorite summer cocktail. Sorry twisted Arnold Palmer… maybe next year πŸ˜‰

Fist start by making your simple syrup. Is it easy to make?….

Mix equal parts sugar and water in a small pan and bring to a boil. I infused mine with strawberry. Which basically means I threw a few frozen strawberries in to give it a hint of strawberry flavor. If I would have had fresh I would have used that or even some raspberries… yum.

Moving on… bring this to a boil and then reduce to a simmer for about 3 minutes until all the sugar is dissolved. Remove from heat to cool completely. And remove fruit chunks.

In a food processor/blender/Ninja/Magic bullet or obliterator of your choice… dump in about 2 heaping cups of watermelon chunks.


Place a fine strainer/sieve over a medium bowl or pitcher. Pour watermelon in and let drain. Use the back of a spoon to press out juice.

You should have about a cup of watermelon juice… this smells amazing!!!

Next, pour in your simple syrup…

Fresh lime juice…

and tequila!!! A clear tequila would probably be best but this is what I had on hand. It was Jose so I felt it would do πŸ˜‰

Grab a glass and fill it with ice…

Pour margarita mix over and garnish with a lime! You could salt the glasses if you prefer… I wasn’t in the mood!!

These were so crisp and refreshing! The paired with the chicken enchiladas perfectly!! These would be great poolside… or even if the sun decided to shine at all!!!!!! Yes, we’ve been in the house due to rain the past 2 days… just me and the kids… Amen to 2 of my favorite friends showing up for dinner tonight!!

Enough about me… try these!!

Watermelon Margaritas
1/2 cup sugar
1/2 cup water
Handful of fresh or frozen fruit
2 heaping cups of watermelon chunks
1/4 fresh lime juice
3/4 cup tequila
lime wedges for garnish

Combine sugar, water, and fruit in a small saucepan over high heat. Once it begins to boil reduce the heat to a simmer for about 3 minutes or until the sugar is completely dissolved. Remove from heat to cool and remove fruit chunks. Place watermelon chunks in blender and process until smooth. Place fine sieve over medium bowl and strain watermelon juice. Add simple syrup to bowl along with lime juice and tequila. Serve over ice. Makes 4 drinks.
