Smoky Beef Quesadillas

So… if you have any leftovers after making Smoky Beef Tacos here’s one thing you can try…make them into quesadillas!!!

I sliced up some red and green pepper, red onion, spinach and grated some cheddar to go along with the smoky shredded beef…. soooo good!!! I like mine with a bit of sour cream and some amazing homemade salsa…

    What kind of tortillas did you use? Are they regular flour or whole wheat? Looks super yummy!

    I am definitely going to check them out. I live in TX so fresh tortillas are a big deal here but they are typically made with lard or shortening and although they taste fantastic they are really unhealthy. At home I tend to stick with the whole wheat tortillas (lard free) but I will definitely try these out. They look amazing!
