Chicken Salad – New & Light

Game changer. I’ve been eating chicken salad for a lot of years and have been pretty content with how it’s been going. A friend of mine served me some chicken salad a couple of months back that kinda rocked me a bit. It was super simple and had enough flavor to hold its own against any chicken salad I’ve had. She’s not a recipe follower either so she gave me a list of ingredients and I tweaked them and adjusted them and here’s what I came up with… I almost licked the bowl… just sayin’

Yay for leftover chicken!! ALWAYS make too much chicken… always… there’s always something you can make with it. This was leftover from this amazing recipe…

I just gave it a rough chop…

threw it into a bowl with some thinly diced apple…

a handful of blurry walnuts…

a handful of raisins…

just a bit of red onion. You don’t want enough to weird people out… just enough so they can say… “hey, there’s a little red onion in this…”

Now for the dressing…  1 big ole squeeze of honey…

1 big ole dollop of mayo…

salt and pepper to taste… wow… you’re done…

pour that over your goodies and stir.

You can eat it on bread… if you can eat bread…

or serve it up on crackers, like the cool people do 🙂

You could really customize this to whatever you have on hand… sliced grapes would be nice, pecans, sunflower seeds, pear…

It’s easy… fresh… cool and refreshing on a hot day… try it!!!!!!!!!!!

Honey Mayo Chicken Salad
Leftover chicken chopped into small bites
Chopped fruit: apple, grapes, pear…
A handful of nuts: walnuts, pecans, almonds, sunflower seeds…
A little red onion

Dressing – Mix almost equal parts honey and mayo in a small bowl and season with salt and pepper. Mix with chopped ingredients and enjoy!!

    kay, so, wanting to make your yummy-looking onion rings! and i saw that your flour doesn’t contain xanthan gum – what kind is it?

      So… my Mom went to Branson with a couple friends and as they were driving back they stopped here… at a bulk foods store on the side of the highway and she found a gluten free flour mix. It has rice flour, sweet rice flour, potato starch, guar gum, and arrow root powder. It’s their own blend. I used it mostly for breading things. I’ll let you have a couple cups of mine…unless you plan on driving to Missouri to pick some up 😉
