Oven Fried Chicken Tenders

Who doesn’t love chicken strips?? Who doesn’t love fried chicken without all the fried?? Who’s actually out there raising their hands?? Ok… enough…

These strips are easy to make and they have a great crunch which almost makes you feel better for not soaking them in oil 🙂 The breading is super customizable and can be made to fit about any appetite… ready to make them?? Great…

Star with chicken tenders or a couple of chicken breasts sliced into strips.

Cover with buttermilk. I had about 3 chicken breasts cut up here and still only needed about a cup of buttermilk, so you don’t need much.

Season with salt, pepper, chopped garlic, and some hot sauce… Toss to coat and let marinate about 30 minutes or throw in the fridge for up to a day. This is a great way to prep ahead.

Now for the breading… I’m all about mixing things up. You’ll want about 3 or 4 cups of breading so you can use bread crumbs, flour, ground tortilla chips, ground crackers, flax seed, ground Rice Chex…  mine had all of these… plus salt and pepper… I know, over achiever…

When you’re ready to get cooking set up your dredging mixture next to your bowl of chicken. You’ll also want a baking sheet with a wire rack on it ready to go. Use your fingers to drain off excess buttermilk…

Dredge in breading mixture. Pat on some chunks… these will get crispy in the oven… so good!

Place the strips on the wire rack and pop into the oven for about 20 minutes.

Remove when they are crispy and golden brown.

Leaving some chunks in the breading give them an extra crunch! These were super tasty and I was glad they weren’t fried because I felt so much better about eating 3 helpings of those onion rings… oh boy…

Oven Fried Chicken Tenders
2 chicken breasts cut into strips
1 cup buttermilk (1/2 pint)
3-4 cups breading mixture (flour, breadcrumbs, ground chips, ground crackers, ground cereal, ground flax… you pick)
salt
pepper
hot sauce (optional)
2 cloves chopped garlic

Soak chicken in buttermilk seasoned with 1 tsp salt, pepper, splash of hot sauce, garlic for 30 minutes or up to 24 hours. Season breading mixture with salt and pepper. Heat oven to 350. Drain chicken of buttermilk using fingers. Dredge in breading, patting on to stick. Place on wire rack resting on rimmed baking sheet.
Bake for about 20 minutes or until golden brown. Serve hot!
