Chicken Sausage w/ Cream Sauce

This picture doesn’t do this meal justice. This was a new creation I tried this week and it is delicious!! Let me tell you about it…

So, it started with a coupon for these… al fresco chicken sausage. They are gluten free and pretty reasonably price… even more so with a coupon… which you can get if you click here. You can just cook this up on the grill but I wanted to do a little more with them. I wanted to use up what was left of my asparagus and I wanted something with a creamy sauce. After a few minutes brainstorming this is what I came up with. If you want to try it, here’s how…

Start with a handful of asparagus, chopped into thirds…

Thinly slice a small onion.

Finely dice some garlic…

and slice up your chicken sausage diagonally into about 1/2 inch pieces.

Heat just a drizzle of olive oil on the stove. When it is hot add in your chicken sausage. These are already cooked so you’re basically just wanting to brown them. If the sausage you are using is not cooked keep in mind you will need to saute it a bit longer.

Once it has started to brown a bit drop in your asparagus and let that start to saute. After a few minutes remove these from the pan. Add in another teaspoon of oil or so.

Then add in your onion and garlic and let that start to brown and become tender.

Once the onions start to become translucent add in a heaping tablespoon of flour.

Stir that all around and let the flour ‘cook’ a bit.

Next, pour in about a cup of chicken/vegetable stock.

Whisk that around to deglaze the pan and pick up all the good brown bits off the bottom of the pan.

This is where it really gets good… add in a good sized spoonful of cream cheese… no need to measure 😉

Whisk that around…

Then season with salt and pepper… and a heaping spoonful of THIS SALSA. Oh man, this is so necessary… are you starting to salivate yet??

Whisk that all around until the cream cheese is melted and the sauce starts to thicken.

Dump your sausage and asparagus back into the mix…

You could just sit down and eat this with a spoon right out of the pan…

or spoon it over a nice bed of brown rice or pasta. The mix of creamy, cheesy, spicy, crispy, sausage-y flavors all compliment each other so well. We will be making this again… as soon as I print off another coupon and head to the store 🙂
