So simple but oh… so tasty. Here’s an easy way to get your starch and veggie together in one pan… gotta love that 🙂
Start by chopping enough potatoes for your crew into a large bowl. I left the skin on… potato skins are so tasty when roasted.
Next came about an equal amount of rough chopped carrots. You can peel these or just scrub them well if you don’t fee like it.
Next throw on some onion petals. You could use white onion but why would you if you have a red onion around?!?!
Next a few cloves of chopped garlic…
Drizzle with a bit of olive oil. Not too much…
Then good helping of salt and pepper and any other seasonings you’d like to throw in. I like to add thyme, oregano, sage… whatever is in my sight when I open the cupboard…
Give it all a good toss… oh and preheat your oven to 375-400… depending on you quickly you need them done and where you put them in the oven. You’ll figure it out 🙂
Dump everything onto some parchment paper on a baking sheet. Obviously my piece of parchment paper doesn’t cover the bottom of the pan… it’s the last of the roll and I would have had to walk down and up a flight of stairs to get another box… so suddenly this was just the right amount of parchment paper 😉
Pop this in the oven and check on it and give it a stir after about 15-20 minutes and when you think it’s almost done turn the broiler on for a couple of minutes to give everything a crispy crunchy roast.
It’s simple but delicious and this combo goes well with just about anything you pair it will… except maybe ice cream… try it!!
