No Bake Chocolate Oatmeal Cookies – Classic

These are trouble… Do not make these if you have equal or less will power than I do when it comes to chocolate and oatmeal. You will be powerless against their aroma and deliciousness. But for those who dare to press on… you’ll be glad to hear they are also super easy. Let’s get started!!

Start with a cup of sugar in a saucepan… did I mention they were terribly unhealthy??? No? Nevermind…

Add in some cocoa powder…

In goes some milk and vanilla. You can hardly see it on the sides but check out that giant cocoa powder air bubble on the left 🙂

Then some butter… oh yes, the butter… Get all that rolling on the stove and let it boil for 5 minutes.

In the mean time grab a large bowl and dump in some oatmeal. I used Bob’s Red Mill Gluten free oats. Bless their hearts for making GF oatmeal if only for this recipe!

You can add a bit of coconut if you wish, you don’t have to… I did!

I forgot to take a pic of the boiling chocolate stuff but I assure you it was hot! Pour the liquid over your dry ingredients…

Stir to combine. Make sure every little bit of oatmeal is covered adequately in chocolate. Thank you very much!

You also should have lined a couple of baking sheets with parchment paper. Now you know… Drop the mixture by the teaspoonful onto the parchment.

They don’t have to be uniform or consistent in size… they’ll taste the same I assure you.

Now just wait for them to dry/set up… This is the single hardest part of the recipe!! Thankfully there is usually just enough left over in the bowl to get a good spoonful for the chef to sample… I love how that works out 🙂

These are super easy for a last minute snack or dessert and you can have your kids help measure the ingredients, stir, and drop them onto the parchment. Mine would have but they were banging pot lids with drumsticks…

No Bake Chocolate Oatmeal Cookies

1 cup sugar
1/4 cup butter
1/4 cup milk
1/2 tsp vanilla
1/4 cocoa powder
1 1/2 cups oatmeal
1/2 cup coconut (optional)

Combine first 5 ingredients in saucepan and bring to boil. Continue to boil for 5 minutes. In large bowl combine oatmeal and coconut. Pour liquid over dry ingredients in bowl. Stir to combine. Drop by teaspoonful onto parchment lined baking sheets. Allow to cool completely.

    My mom made these A LOT (weekly, perhaps) when we were growing up – except that she includes peanut butter. So, if you love chocolate-peanut butter combinations, which I find irresistable, then it’s a double-whammy!
