Way too easy chicken & asparagus w/bacon

Here’s a super easy chicken recipe that will be great for last minute dinners with your family but could also impress company. It’s almost too easy…

I’m also going to throw in some asparagus w/bacon because I like you so much 🙂

OK folks… get out a baking dish or if you’re doing a bunch of these grab a baking sheet. This chicken makes amazing leftovers so don’t be afraid to make some extra. Drop your chicken into the baking dish and turn your oven to 375.

Drizzle a little bit of olive oil over the chicken. It doesn’t need much… My oil is really light so it’s kinda hard to see here but trust me…

Next sprinkle with salt, pepper, and minced garlic. You could really stop here and you’d be set.

I went a step further and dashed on some spicy seasoning mix. You could do some dried herbs here or any spice that makes you smile. Experiment with this one!

On to the asparagus… Here’s mine… it’s been in the fridge a bit too long so I’m going to cut it in about half but normally you’d only need to trim about 1-2 inches off the bottom of the stems.

You could saute the asparagus in a little olive oil and butter but I happened to have this extra bacon laying around so that went into the pan to get a head start.

Once the bacon starts rendering a bit throw in your asparagus. This doesn’t take long so you can wait until a few minutes before you take the chicken out of the oven to be sure your asparagus stays firm and crisp… or if you like it soggy enough to tie it into a knot… start it an hour earlier 😉

The chicken is done and so is my asparagus… off goes the heat!!

This is after about 25 minutes in the oven… it smells AMAZING!! Leave this in the pan or put it on a cutting board and let it rest about 5 minutes.

This is some serious goodness right here. The chicken is super moist and suprisingly flavorful. The saltyness of the bacon is a perfect match for the asparagus as well. I threw some brown rice in the mix to make everyone feel like they were getting their money’s worth! The leftovers make for perfect chicken salad… hint hint or even sandwiches. That is… if there are any leftovers 🙂 Try this!!
