Sugar cookies are one of my favorite things to make… and eat. They take a little extra time to roll and cut out but that is just more of an opportunity to add some love to them before giving them away 😉
I used to be intimidated by sugar cookies and had tried several recipes but it wasn’t until I came across this recipe that I really enjoyed making them. It’s super easy and VERY forgiving. You really can’t mess it up… I got it from this lovely lady 😉
That being said I’m a bit of a lazy baker. I like to make my sugar cookies in 3 phases…
1. Mixing up the dough
2. Rolling and baking
This recipe will consist of 3 posts but you can do them all in one day if you so choose! Also, I usually double the recipe because if you’re rolling out 50 cookies you mine as well be rolling 100! Plus, they freeze beautifully and you can make them ahead for any occasion.
Here’s your cast of characters. Yes, we use local farm fresh brown cage free eggs. We are “those people”. Yes, my sugar is in a mason jar, that’s how I like it. Moving on…
Throw 2 sticks or 1/2 lb of unsalted room temperature butter into your mixer or large mixing bowl if you’re using a hand mixer.
Next, a cup of sugar. Sorry… I forgot to turn the flash off for the next few shots… it was late… there was a blizzard going on…
Cream the butter and sugar together for a minute. There is really no secret to this or knowing exactly when to stop. When it’s mixed up, you’re good.
Next up the eggs… just look at these beauties… once you go farm fresh you won’t go back people… there’s just something so boring about a white egg to me anymore!
OK, one egg in and give it a mix.
Second egg in and mix some more. You could add them at the same time, I’ve done it and nothing exploded 🙂
Your dough will look a little something like this…
Add in 1/2 tsp of vanilla.
Next, a 1/2 tsp of baking powder, baking soda, and salt. In no particular order.
Next your first cup of sugar. I don’t sift my dry ingredients together… does it matter?? Not to the people eating my cookies 🙂
2nd cup of flour and mix.
Third cup of flour and now it’s really starting to look like dough. You can stop as soon as everything is mixed in well.
It’ll look like this…
Give it a quick stir to make sure you got all the ingredients on the bottom of the bowl and off the sides mixed in.
Put it in a container and pop a lid on it and send it to the refrigerator to chill!
That was easy, wasn’t it!?!? After making these you’re going to wonder why you haven’t been making sugar cookies every week!!
2 sticks (1/2 lb) unsalted butter, room temp
1 cup sugar
2 large eggs
1/2 tsp vanilla
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
3 cups flour
Mix in order given. Cover and set in fridge to chill at least 2 hours.
